Lemon Poppyseed Cake

Equally delicious baked as muffins or a single loaf. Just decrease your cooking time to 20 minutes for muffins.

 

INGREDIENTS

¾ cup coconut flour

2 Tbsp poppy seeds

1 tsp baking powder

1 Tbsp lemon juice

Zest of two lemons

2 Tbsp avocado oil

½ cup soy milk

3 Tbsp honey

3 eggs

2 scoops Collagen Straight Up

 

DIRECTIONS

Preheat your oven to 160 degrees, on fan forced and line a loaf tin with baking paper.

Combine all of your ingredients in a large bowl.

Transfer the mixture to your lined tin and bake for 30-40 mins or until golden on top.

Serve with a dollop of plain Greek yoghurt or enjoy as is!
