Carrot Cake Balls
INGREDIENTS
- 140g carrots
- 50g walnuts
- 16g flaxseed
- 60g desiccated coconut
- 100g oats
- 1/2 tsp ginger
- 2 tsp cinnamon
- 100g medjool dates (or dried dates soaked for 10 mins in hot water)
- 70g almond butter
- 1 tsp vanilla
- 1 tbsp honey
- 3 scoops Collagen Straight Up
DIRECTIONS
- Place carrots in a food processor until chopped into tiny pieces. Remove and set aside.
- Add walnuts, flaxseed, coconut, oats and spices and blend until a fine "flour" forms.
- Return the carrots to the food processor and the remaining ingredients. Blend until the mixture comes together in a dough-like consistency.
- Roll into balls and eat as they are or roll in some more desiccated coconut.
- Store in an airtight container.
