Carrot Cake Balls

INGREDIENTS

  • 140g carrots
  • 50g walnuts
  • 16g flaxseed
  • 60g desiccated coconut
  • 100g oats
  • 1/2 tsp ginger
  • 2 tsp cinnamon
  • 100g medjool dates (or dried dates soaked for 10 mins in hot water)
  • 70g almond butter
  • 1 tsp vanilla
  • 1 tbsp honey
  • 3 scoops Collagen Straight Up

 

DIRECTIONS

  • Place carrots in a food processor until chopped into tiny pieces. Remove and set aside.
  • Add walnuts, flaxseed, coconut, oats and spices and blend until a fine "flour" forms.
  • Return the carrots to the food processor and the remaining ingredients. Blend until the mixture comes together in a dough-like consistency.
  • Roll into balls and eat as they are or roll in some more desiccated coconut.
  • Store in an airtight container.
